In-Character
The colloquial name for both the god of death, and the underworld which he/she* rules. "He" decides how long a soul will be kept before release, and where the soul will appear upon its return.
Points that connect with the land of Hades generally have a grim history and are locations associated with death (such as graveyards). Exceptions abound, however, but no one knows the rhyme or reason for these exceptions.

Out-of-Character
At Adventures, Hades is a location usually marked off with rope where players go when they've died. The elder at the resurrection location is known as the "Hades Elder", and must be obeyed as any other elder. They keep track of death times and have discretion on when to release souls.
Wounds and damaged armor can also (normally) be healed/repaired in Hades for a shorter count (though this is rarely utilized). More information can be found in the rulebook.
A live player may not interact with those in Hades, and hanging out near the Hades location can result in a player being called dead by the Hades Elder (depending on the adventure setup, and at the elder's discretion). It is against the rules to lurk next to Hades in order to ambush players who are coming alive.
